General RV’s streaming series “Chef RV” is on the road in search of the best seafood on both of Florida’s coasts. Host Carlos Parisi is traveling in a Thor Sequence 20K Class B camper van throughout the Sunshine State.
The final stop of the trip brings Chef RV to Big Ray’s Fish Camp in Tampa for the fresh catch of the day. Chef Raymond “Nick” Cruz grew up watching and learning about fishing from his Grandpa Cruz around Ballast Point Pier, a popular park and community gathering spot with views of the downtown skyline. Countless summer days spent fishing, cleaning and cooking “fish on the line” would eventually turn into a personal passion to serve the best and freshest seafood in South Tampa.
Specializing in seafood and sandwiches – especially grouper and shrimp dishes – Big Ray’s is located just down the road from his grandfather’s old house. After being voted the best seafood in Tampa shortly after opening in 2015, Big Ray’s now has a second location on the Tampa Riverwalk.
Gourmet Meals Anywhere You Roam in a Thor Sequence Class B Camper Van
Chef Nick has spent his entire life cooking, and working in a kitchen is all he’s ever known. When presented with the idea of cooking his specialties in a Thor Sequence Class B camper van, he didn’t hesitate to take the opportunity.
Utilizing the ample counter space in the kitchen, Chef Nick slices pieces of fresh fish for his signature Grouper Sandwich. After generously seasoning the grouper, Chef Nick sears them in a hot pan over the two-burner gas cooktop. Next, Chef Nick demonstrates how the gas cooktop is wonderful for sautéing seasoned shrimp with little fuss. With the A/C blasting overhead in the Thor Sequence, Chef Nick comments how cooking in the Class B camper van is more comfortable than his commercial kitchen.

Grouper Sandwich
- 6-7 oz Grouper
- ¼ Cup Blackened Seasoning
- 1-2 Leaves Lettuce
- 2 Slices Tomato
- 1 Slice Raw Onion
- Single Brioche Bun
Tartar Sauce
- ½ Cup Mayonnaise
- 2 Tsp Mustard
- 1 Tsp Sweet Relish
- 1 Tsp Worcestershire Sauce
- To Taste Salt
- To Taste Pepper
- 1 Tbsp Lemon Juice
Shrimp N’ Yuca
- 8 oz Peeled Shrimp
- ¼ Cup Blackened Seasoning
- 2 Medium Yucas
- To Taste Salt & Pepper

Chef Nick enjoyed cooking in the Thor Sequence, saying it reminds him of his younger days catching fish and frying them up in coastal campgrounds. He says traveling in a motorhome like the Thor Sequence and experiencing different cultures and foods is something he now strives for.
