Chef RV: Baobab Fare Brings East Africa to Detroit

Bringing the vibrant flavors of East Africa to Detroit, Baobab Fare embodies the spirit of “Detroit Nu Nyumbani” — Detroit is Home.

Originating from the East African country of Burundi, Nadia Nijimbere and chef Hamissi Mamba launched Baobab Fare in 2017, named after the iconic African “tree of life.” The husband-and-wife duo began with pop-ups on the street and at festivals, and in 2021 they opened their brick-and-mortar location in Detroit. Their food truck, Waka, meaning “shine,” has served Baobab Fare on wheels since 2022.

With dishes such as mhogo — shredded pan-fried chicken in a tangy mustard-onion sauce, served with yellow beans and yuca root, a staple of Burundian cooking — and their signature numbing, meaning “home” — tender beef slow-simmered in ripened tomato sauce and served with corn salad and peanut-stewed spinach — the menu offers unique combinations and complex flavors.

Chef RV: From Buffalo to The Big House

Chef Jordan Balduf knows how to keep both teams happy. Born and raised in Buffalo, NY, it’s no wonder he’s a natural at cooking some of the best buffalo chicken wings in the game.

Today, you’ll find Chef Jordan cooking his staple wings at Side Biscuit in the heart of Ann Arbor, Mich. The 270-square-foot kitchen is small but mighty, churning nearly two dozen 40-pound cases of chicken wings per week. In addition to the crispy chicken wings, the restaurant is also known for its buttery biscuits and savory chicken dip. The wings can be tossed in a variety of mouthwatering sauces made in house. The fresh flavors range from classics like “OG Buffalo” to more unexpected, original flavors like “Gucci Gang,” a sweet but spicy sauce made with Korean chili paste called gochujang.
